Ingredients: 1 beef Tri-tip Roast (3 to 4-1/2 pounds) Spice Paste: 1/3 cup olive oil. 2 tsp granulated garlic. 1 tsp paprika. 1-1/2 tsp kosher salt.
Traditionally, tri-tip is cooked over red oak coals, which bring out its beefy flavor. But even if you don’t find red oak, any other charcoal, or even a smoker, will deliver great results.
